For the Salisbury Steaks:

  • 1 lb ground beef (80/20 blend)
  • 1/3 cup breadcrumbs
  • 1 egg, lightly beaten
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • 1 tbsp olive oil or butter (for searing)

For the Mushroom Gravy:

  • 8 oz cremini or button mushrooms, sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix gently until just combined.

  2. Shape the mixture into 4 oval patties, about ½ inch thick.

  3. Heat olive oil or butter in a cast iron skillet over medium-high heat. Sear patties for 4-5 minutes per side, until browned. Transfer to a plate.

  4. In the same pan, melt butter over medium heat. Add mushrooms and sauté for 5-6 minutes until golden and tender.

  5. Sprinkle flour over the mushrooms and stir to coat. Cook for 1-2 minutes.

  6. Gradually whisk in beef broth, followed by Worcestershire sauce, Dijon mustard, salt, and pepper.

  7. Return the patties to the skillet, nestling them into the gravy. Cover and simmer on low heat for 10-15 minutes, spooning gravy over the patties occasionally.

  8. Garnish with fresh parsley and serve hot.
