Description

This easy Rotel Dip is the ultimate party snack made with Velveeta cheese, ground beef, and Rotel tomatoes with green chilies. Creamy, cheesy, and ready in minutes—perfect for game day, holidays, or a last-minute appetizer. A must-have for your snack spread!


Ingredients

  • 1 lb ground beef
  • 16 oz Velveeta cheese, cubed
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies, undrained)
  • Optional: chopped cilantro and diced tomatoes for garnish

Instructions

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  • Cut Velveeta into cubes and add to the skillet with the beef.
  • Pour in the entire can of Rotel (with liquid).
  • Stir continuously over low heat until the cheese is fully melted and the dip is smooth—about 5–7 minutes.
  • Transfer to a serving bowl or keep warm in a small slow cooker.
  • Garnish with chopped cilantro or diced tomatoes if desired. Serve warm with chips or your favorite dippers.
