1 large spaghetti squash (about 2.5 to 3 lbs)
2 tablespoons olive oil

3 cloves garlic, minced
1 1/4 cups heavy cream
1/2 cup whole milk (optional)
1 cup freshly grated Parmesan cheese
1/2 cup shredded mozzarella cheese (for sauce)
1/2 cup shredded mozzarella cheese (for topping)
1/4 teaspoon ground nutmeg
1/4 teaspoon red pepper flakes (optional)
2 tablespoons chopped parsley (for garnish)

Instructions
1. Preheat your oven to 400°F (200°C). Slice the squash in half lengthwise and scoop out seeds.
2. Drizzle inside with olive oil, season with salt and pepper, place cut-side down on parchment-lined baking sheet, and roast for 35-40 minutes.
3. In a saucepan, melt butter over medium heat and sauté garlic for 1-2 minutes.
