Ingredients
1 head of garlic
1 tablespoon olive oil
1 cup unsalted butter, softened
2 teaspoons Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon freshly squeezed lemon juice
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon sea salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh chives
1/2 teaspoon garlic powder
Instructions
1. Preheat oven to 400°F (200°C). Cut the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft. Cool slightly and squeeze cloves out of the skin.
2. In a saucepan over low heat, melt the butter gently without browning it.
3. Add roasted garlic to the melted butter and mash with a whisk or fork until blended.
4. Stir in Dijon mustard, Worcestershire sauce, lemon juice, smoked paprika, cayenne, red pepper flakes, salt, black pepper, and garlic powder.
5. Simmer on low for 3–4 minutes, stirring often to let the flavors infuse.
6. Turn off the heat and stir in parsley and chives for a fresh burst of flavor.
7. Taste and adjust seasoning as needed. Add more lemon, salt, or spice depending on your preference.
8. Serve warm in ramekins or bowls as a dip or drizzle for steak, veggies, or bread.
Notes
Always add fresh herbs at the end to preserve their color and brightness.
For a smoother finish, blend the butter or strain out the garlic and herb bits.
Adjust spice levels to suit your taste—mild to fiery, it’s all up to you.
