  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small red onion, cut into wedges
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes
  • 1.5 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried Italian herbs

Instructions

  1. Wash and dry all vegetables thoroughly.
  2. Cut vegetables into bite-sized pieces as described.
  3. In a large bowl, toss the vegetables with olive oil, salt, pepper, and herbs until evenly coated.
  4. Preheat the air fryer to 375°F (190°C), if needed.
