12 oz rigatoni pasta

2 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons all-purpose flour

1.5 cups heavy cream

1 cup whole milk

1 cup freshly grated Parmesan cheese

0.5 cup grated mozzarella cheese (optional)

0.25 teaspoon black pepper

Salt, to taste

0.25 teaspoon crushed red pepper flakes (optional)

0.5 cup reserved pasta water (as needed)

Chopped parsley, for garnish


Instructions

1. Marinate steak tips with olive oil, Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Let rest for 20–30 minutes.

2. Cook rigatoni in salted boiling water until al dente. Reserve 0.5 cup of pasta water, then drain.

3. Sear steak tips in a cast iron skillet with 1 tablespoon butter over medium-high heat for 2–3 minutes per side. Set aside.

4. In a deep skillet, melt 2 tablespoons butter over medium heat. Add garlic and sauté for 1 minute.

5. Whisk in flour and cook for 1 minute to form a roux.

6. Slowly add heavy cream and milk while whisking. Simmer 4–5 minutes until thickened.
