1 tablespoon olive oil
1 pound Italian sausage (mild or spicy), casing removed
1 small yellow onion, finely diced
3 cloves garlic, minced
2 tablespoons tomato paste
28 ounces crushed tomatoes
4 cups chicken broth
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
10 ounces refrigerated cheese tortellini
1/2 cup heavy cream
1/3 cup freshly grated Parmesan cheese plus more for serving
Fresh chopped parsley or basil for garnish
Instructions
1. Heat olive oil in a large Dutch oven or soup pot over medium heat. Add sausage and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if needed.
2. Add diced onion and sauté until translucent, about 3–4 minutes. Stir in minced garlic and cook for another minute.
3. Stir in tomato paste and cook for about 1 minute to deepen the flavor.
4. Add crushed tomatoes, chicken broth, basil, oregano, red pepper flakes, salt, and pepper. Bring to a boil.
5. Reduce heat and simmer for 15–20 minutes so the flavors develop.
6. Add the cheese tortellini and simmer for 7–10 minutes until tender.
7. Reduce heat and stir in heavy cream and grated Parmesan cheese.
8. Taste and adjust seasoning if necessary.
