1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks

0.5 cup all-purpose flour (for dredging)
2 tablespoons olive oil
1 tablespoon butter
2 tablespoons butter
1 medium onion, finely chopped
3 garlic cloves, minced
10 oz cremini or button mushrooms, sliced
1 tablespoon all-purpose flour
1 cup chicken broth
1 teaspoon Dijon mustard
0.75 cup sour cream, room temperature
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Season chicken pieces with salt and pepper. Dredge in flour, shaking off excess.
2. In a large skillet, heat olive oil and 1 tablespoon of butter. Sear chicken on medium-high heat for 3-4 minutes per side until golden. Remove and set aside.
3. In the same skillet, add 2 tablespoons butter. Sauté onions until translucent, then add garlic and cook for 30 seconds.
4. Add mushrooms. Cook for 6-8 minutes until browned and moisture evaporates.
5. Sprinkle flour over mushrooms. Stir and cook for 1 minute. Gradually whisk in chicken broth. Add Dijon mustard. Simmer.
6. Lower heat. Stir in sour cream until smooth. Return chicken to skillet and simmer 5 minutes more.
7. Adjust seasoning. Garnish with chopped parsley. Serve hot over mashed potatoes, pasta, or rice.

For a lighter version, swap sour cream with Greek yogurt.
