Ingredients
1 box red velvet cake mix
3 eggs
1/2 cup vegetable oil
1 cup water
1 cup cream cheese frosting
12 oz white chocolate chips or white melting wafers
1 tsp coconut oil or vegetable shortening
optional red velvet cake crumbs or red sprinkles for decoration
optional dark or red chocolate for drizzle
Instructions
1. Prepare the red velvet cake as directed on the package, then allow it to cool completely.
2. Crumble the cooled cake into fine crumbs in a large mixing bowl.
3. Add the cream cheese frosting and mix until well combined into a dough-like consistency.
4. Roll the mixture into tablespoon-sized balls and place them on a parchment-lined baking sheet.
5. Chill the cake balls in the refrigerator for 1 hour or freezer for 30 minutes.
6. Melt the white chocolate with coconut oil in a microwave-safe bowl or double boiler until smooth.
7. Dip each cake ball into the melted chocolate, let the excess drip off, and place back on the sheet.
