  • 1820 oz cheese or spinach ravioli
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1.5 cups cherry tomatoes, halved
  • ¼ cup fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ¼ teaspoon crushed red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add ravioli and cook according to package directions. Reserve ½ cup pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  3. Add asparagus to the skillet and cook for 2–3 minutes until tender-crisp.
  4. Stir in cherry tomatoes and cook another 2–3 minutes, until slightly softened. Season with salt and pepper.
  5. Gently add cooked ravioli to the skillet. Toss everything together, adding reserved pasta water as needed to loosen the sauce.
  6. Turn off heat. Add chopped parsley and red pepper flakes if using. Taste and adjust seasoning.
  7. Serve warm, optionally with grated cheese or lemon zest.
