  • 1/2 cup pineapple juice
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Optional: chopped green onions and cilantro for garnish

Instructions

  1. In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, rice vinegar, and sesame oil.
  2. Place chicken thighs in a zip-top bag or shallow dish. Pour marinade over the chicken, ensuring even coverage. Refrigerate for at least 30 minutes (up to overnight).
  3. Preheat your grill or skillet over medium-high heat. Lightly oil the surface.
  4. Remove chicken from marinade and cook for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).
  5. Optional: Boil remaining marinade for 5 minutes and baste the chicken while cooking for extra flavor.
