- 1/2 cup pineapple juice
- 1/3 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Optional: chopped green onions and cilantro for garnish
Instructions
- In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, rice vinegar, and sesame oil.
- Place chicken thighs in a zip-top bag or shallow dish. Pour marinade over the chicken, ensuring even coverage. Refrigerate for at least 30 minutes (up to overnight).
- Preheat your grill or skillet over medium-high heat. Lightly oil the surface.
- Remove chicken from marinade and cook for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).
- Optional: Boil remaining marinade for 5 minutes and baste the chicken while cooking for extra flavor.
- Let the chicken rest for 5 minutes before serving. Garnish with green onions or cilantro, if desired.
