  • 1/3 cup honey
  • 1/4 cup soy sauce (reduced sodium, if preferred)
  • 2 garlic cloves, minced (or 1 tsp jarred minced garlic)
  • Optional: 1 tsp minced fresh ginger
  • 1 lb medium uncooked shrimp, peeled & deveined
  • 2 tsp olive oil
  • Optional for garnish: Chopped green onion

Instructions

  1. In a medium bowl, whisk together the honey, soy sauce, garlic, and fresh ginger (if using). Set aside half of the marinade for cooking.
  2. Place the shrimp in a large zip-top bag or sealable container. Pour half of the marinade over the shrimp, shake to coat, and refrigerate for 15 minutes (or up to 8-12 hours).
  3. Heat the olive oil in a skillet over medium-high heat. Add the shrimp, discarding the used marinade, and cook for about 45 seconds on one side.
  4. Flip the shrimp, pour in the remaining marinade, and cook for another 1-2 minutes, or until the shrimp are fully cooked and pink.
  5. Serve immediately with the cooked sauce and garnish with chopped green onions if desired. Perfect with brown rice and steamed vegetables.
