  • 1 cup pecans, toasted
  • 1 cup light brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup light corn syrup
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat. Spread the popped popcorn evenly on the baking sheet and sprinkle the toasted pecans on top.
  2. Make the caramel sauce: In a medium saucepan over medium heat, combine the butter, brown sugar, corn syrup, and salt. Stir until the butter melts and the mixture comes to a boil. Let it simmer for 4-5 minutes without stirring.
  3. Add baking soda and vanilla: Remove from the heat and stir in the vanilla extract and baking soda. The mixture will bubble – this is normal.
  4. Coat the popcorn: Immediately pour the caramel sauce over the popcorn and pecans. Gently toss with a heat-safe spatula until everything is evenly coated.
  5. Bake the popcorn: Place the baking sheet in the preheated oven and bake for 45 minutes, stirring every 15 minutes to ensure even coating.
  6. Cool and serve: Remove from the oven and let the popcorn cool for 10-15 minutes. Break it into clusters and enjoy!
