Ingredients
Scale
- 12–15 potstickers (frozen or fresh)
- 6 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp rice vinegar (optional)
- 1/2 cup carrots, thinly sliced
- 1/2 cup mushrooms, sliced
- 1/2 cup peas or baby spinach
- 1/4 tsp red pepper flakes or a drizzle of sriracha (optional)
- 2 green onions, chopped (for garnish)
Instructions
- Prepare the broth: Heat a small amount of oil in a large pot over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Season the broth: Pour in the chicken or vegetable broth. Stir in soy sauce, sesame oil, and rice vinegar (if using). Let it simmer for about 5 minutes.
- Cook the potstickers: Gently add the potstickers to the simmering broth and cook according to package instructions—typically 5-7 minutes for frozen, or 3-4 minutes for fresh.
- Add vegetables: Stir in sliced carrots, mushrooms, and peas or spinach. Let cook for another 2-3 minutes, or until vegetables are tender.
- Serve: Ladle the soup into bowls, making sure each portion has a good mix of dumplings, broth, and vegetables. Garnish with chopped green onions and an extra drizzle of sesame oil if desired. Enjoy!
