  • 8 cups plain popped popcorn (air-popped or lightly salted)
  • 1 cup sharp cheddar cheese, shredded or thinly sliced
  • 45 strips cooked bacon, chopped or crumbled
  • ¾ cup celery, finely chopped
  • ½ cup green onions or scallions, finely chopped
  • ¼ cup fresh parsley, chopped
  • Optional: diced cucumbers, shredded carrots, or radishes for extra crunch

For the Dressing:

  • ½ cup mayonnaise
  • ¼ cup sour cream (or plain Greek yogurt for a lighter option)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • Salt and black pepper, to taste

Instructions

  1. Cook the bacon: In a skillet, cook the bacon until crispy. Once done, place on paper towels to drain excess fat, then crumble or chop into pieces.
  2. Prep the veggies: Chop the celery, green onions, and parsley. Pat dry any moisture from the veggies.
  3. Prepare the popcorn: Pop your popcorn, let it cool slightly, then fluff to separate any clumps.
  4. Make the dressing: Mix the mayonnaise, sour cream, apple cider vinegar, mustard, sugar, and seasoning in a small bowl until smooth.
  5. Combine the ingredients: In a large mixing bowl, add the popcorn, bacon, cheese, veggies, and parsley. Drizzle with dressing and toss gently to combine.
  6. Chill and serve: Optionally, chill the salad for 30 minutes to allow the flavors to meld. Serve immediately or after chilling.
