- 8 cups plain popped popcorn (air-popped or lightly salted)
- 1 cup sharp cheddar cheese, shredded or thinly sliced
- 4–5 strips cooked bacon, chopped or crumbled
- ¾ cup celery, finely chopped
- ½ cup green onions or scallions, finely chopped
- ¼ cup fresh parsley, chopped

For the Dressing:
- ½ cup mayonnaise
- ¼ cup sour cream (or plain Greek yogurt for a lighter option)
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard

Instructions
- Cook the bacon: In a skillet, cook the bacon until crispy. Once done, place on paper towels to drain excess fat, then crumble or chop into pieces.
- Prep the veggies: Chop the celery, green onions, and parsley. Pat dry any moisture from the veggies.
- Prepare the popcorn: Pop your popcorn, let it cool slightly, then fluff to separate any clumps.
- Make the dressing: Mix the mayonnaise, sour cream, apple cider vinegar, mustard, sugar, and seasoning in a small bowl until smooth.
- Combine the ingredients: In a large mixing bowl, add the popcorn, bacon, cheese, veggies, and parsley. Drizzle with dressing and toss gently to combine.
- Chill and serve: Optionally, chill the salad for 30 minutes to allow the flavors to meld. Serve immediately or after chilling.
- Prep Time: 15 minutes
- Chill Time (Optional): 30 minutes
