Ingredients

Scale

1 lb ground chicken

1 small yellow onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 cup canned water chestnuts, diced

3 green onions, chopped

1 head butter lettuce, leaves separated and rinsed

1 tablespoon sesame seeds (optional)

Instructions

1. Heat a tablespoon of oil in a large skillet over medium-high heat. Add diced onion and cook until softened, about 2-3 minutes.

2. Add minced garlic and ginger; cook for 30 seconds until fragrant.

3. Add ground chicken and cook, breaking it apart with a spoon, until browned and fully cooked through, about 5-7 minutes.

4. Stir in soy sauce, hoisin sauce, rice vinegar, and sesame oil. Mix well and let it simmer for 2 minutes.

5. Add diced water chestnuts and half of the green onions. Cook for 1-2 more minutes, then remove from heat.

6. Spoon the filling into individual butter lettuce leaves.

7. Garnish with remaining green onions and sesame seeds. Serve immediately.

Notes

Chop the water chestnuts and onions finely for a more uniform filling texture.

Chill your lettuce leaves beforehand for added crispness and better structure.

Double the filling recipe for easy meal prep throughout the week.
