Ingredients
1 cup gluten-free cornmeal
1/2 cup white rice flour
1/4 cup gluten-free all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 cup finely chopped onion
1 egg, beaten
3/4 cup buttermilk
1 tablespoon apple cider vinegar
vegetable oil for frying
Instructions
1. In a large bowl, whisk together cornmeal, rice flour, gluten-free all-purpose flour, sugar, baking powder, baking soda, salt, pepper, onion powder, and garlic powder.
2. Fold in chopped onion.
3. In a separate bowl, whisk the egg, buttermilk, and apple cider vinegar.
4. Pour wet ingredients into dry mix and stir until just combined.
5. Let the batter rest for 5–10 minutes.
6. Heat 2–3 inches of vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
