Ingredients

Scale

8 medium Granny Smith apples, peeled, cored, and sliced thin

3/4 cup granulated sugar

1/4 cup light brown sugar, packed

1/4 cup all-purpose flour

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

2 teaspoons lemon juice

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

3/4 cup unsalted butter, chilled and cubed

1 cup whole milk, cold

1 teaspoon vanilla extract

1 tablespoon turbinado or coarse sugar (optional)

Instructions

1. Preheat oven to 375°F (190°C).

2. In a large bowl, toss apples with both sugars, flour, cinnamon, nutmeg, salt, lemon juice, and vanilla extract until evenly coated.

3. Spread apple mixture into a greased 9×13-inch baking dish.

4. In another bowl, whisk flour, sugar, baking powder, and salt for the topping.

5. Cut in the cold butter using a pastry cutter until the mixture forms coarse crumbs.

6. Stir in cold milk and vanilla until just combined — do not overmix.

7. Drop spoonfuls of the topping over the apples, leaving some gaps.

8. Sprinkle with turbinado sugar, if using.

9. Bake uncovered for 40–45 minutes, until golden and bubbly.

10. Let cool for 15 minutes before serving with ice cream or whipped cream.

Notes

Mix apple varieties like Granny Smith and Honeycrisp for better flavor depth.

Cold butter and minimal mixing are key to a light, flaky cobbler topping.

Let the cobbler rest before serving so the juices can thicken and set properly.
