1 cup brown sugar

1 and 1/2 teaspoons baking powder

1/4 teaspoon baking soda

2 large eggs

1/2 cup melted butter

3/4 cup milk or buttermilk

3/4 cup chopped pecans

2 tablespoons maple syrup or honey (optional)


Instructions

2. In a large bowl, whisk flour, brown sugar, baking powder, baking soda, and salt.

3. In a separate bowl, whisk eggs, then add melted butter, milk or buttermilk, and vanilla.

4. Combine wet and dry ingredients just until mixed. Fold in most chopped pecans, reserving some for topping.

5. Divide batter into muffin cups, about 3/4 full. Top with reserved pecans and drizzle maple syrup if desired.

6. Bake 18–22 minutes until a toothpick inserted comes out clean and tops are golden brown.

7. Let cool in tin for 5 minutes, then transfer to wire rack to cool completely.
