  • 1 cup Medjool dates, pitted (soaked if dry)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey (optional)
  • Pinch of sea salt
  • 1/2 cup finely chopped pecans (for coating)

Instructions

  1. Toast pecans (optional): Preheat oven to 350°F (175°C). Toast for 7–8 minutes until fragrant. Cool completely.
  2. Blend dates: Add pitted dates, cinnamon, vanilla, and salt to a food processor. Pulse into a sticky paste.
  3. Add pecans: Add 1 1/2 cups of toasted pecans. Pulse until combined and dough-like. Add maple syrup if needed.
  4. Chill: Refrigerate dough for 20–30 minutes if too soft to roll.
  5. Shape: Scoop dough using a tablespoon or small cookie scoop. Roll into balls.
  6. Coat: Roll each ball in chopped pecans, pressing gently to stick.
  7. Set: Place on parchment-lined tray and chill 20 minutes before serving.
