- 2 cups pecans, finely chopped (toasted for enhanced flavor, optional)
- 1 cup graham cracker crumbs
- 1/2 cup brown sugar
- 1/4 cup maple syrup (add more if needed to bind)
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 1 cup melted chocolate (optional, for coating)
Instructions
- If desired, toast the chopped pecans in a skillet over medium heat for 3-4 minutes, stirring constantly, until fragrant. Let them cool.
- In a large mixing bowl, combine the pecans, graham cracker crumbs, brown sugar, maple syrup, melted butter, and vanilla extract. Mix well until the dough is sticky and moldable. Add more maple syrup or melted butter if the mixture feels too dry.
- Roll the mixture into small balls, about 1 inch in diameter, and place them on a parchment-lined tray.
- Chill the balls in the refrigerator for at least 30 minutes to firm up.
- (Optional) Melt the chocolate in a microwave or double boiler. Dip each chilled ball into the melted chocolate, ensuring it’s fully coated. Return to the tray and let the chocolate set in the refrigerator for 15-20 minutes.
- Serve immediately or store for later!
Notes
- For a crunchier texture, sprinkle crushed pecans or flaky sea salt over the chocolate coating.
- Store the Pecan Pie Balls in an airtight container in the refrigerator for up to 7 days or freeze for up to 2 months. Thaw in the refrigerator before serving.
