  • 1/2 cup Italian-style breadcrumbs
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup panko breadcrumbs
  • 2 tbsp grated Parmesan cheese (for topping)
  • 1 tbsp melted butter



Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix ingredients: In a large bowl, combine ground chicken, Italian breadcrumbs, egg, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix until just combined.
  3. Shape and bake: Form the mixture into a loaf shape on the prepared baking sheet. Bake for 35-40 minutes or until the internal temperature reaches 160°F (71°C).
  4. Add toppings: Remove from oven and spread marinara sauce over the meatloaf. Sprinkle mozzarella cheese evenly on top.
  5. Make crispy topping: In a small bowl, mix panko breadcrumbs, Parmesan cheese, and melted butter. Sprinkle over the cheese layer.
  6. Finish baking: Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and the topping is golden brown. Broil for 2-3 minutes for extra crispiness.
  7. Let rest: Allow meatloaf to rest for 5-10 minutes before slicing. Serve warm with extra marinara sauce if desired.
