- 1/2 cup Italian-style breadcrumbs
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup panko breadcrumbs
- 2 tbsp grated Parmesan cheese (for topping)
- 1 tbsp melted butter
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Mix ingredients: In a large bowl, combine ground chicken, Italian breadcrumbs, egg, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix until just combined.
- Shape and bake: Form the mixture into a loaf shape on the prepared baking sheet. Bake for 35-40 minutes or until the internal temperature reaches 160°F (71°C).
- Add toppings: Remove from oven and spread marinara sauce over the meatloaf. Sprinkle mozzarella cheese evenly on top.
- Make crispy topping: In a small bowl, mix panko breadcrumbs, Parmesan cheese, and melted butter. Sprinkle over the cheese layer.
- Finish baking: Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and the topping is golden brown. Broil for 2-3 minutes for extra crispiness.
