2 large boneless, skinless chicken breasts (sliced into strips)

1 tablespoon olive oil

1 tablespoon minced garlic

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

1/2 cup red bell pepper, diced

1/2 cup chopped onions (optional)

1 1/2 cups shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1/2 cup shredded pepper jack cheese (optional)

4 large flour tortillas

2 tablespoons butter (softened, for brushing tortillas)

Fresh parsley or chives, chopped (for garnish)

Dipping sauces (ranch, marinara, chipotle mayo – optional)


Instructions

1. Heat olive oil in a skillet over medium heat. Add chicken strips and sprinkle with garlic, garlic powder, onion powder, paprika, salt, and pepper. Cook until golden brown and fully cooked, about 6–8 minutes.

2. In the same pan, add a little oil if needed and toss in red bell peppers and onions. Sauté for 3–4 minutes until softened and lightly charred.

3. Lay tortillas flat. Add a layer of cheeses, cooked chicken, sautéed veggies, and more cheese on top. Roll them burrito-style.

4. Preheat a clean skillet or grill pan. Lightly brush wraps with butter. Grill seam-side down first, pressing lightly, for 2–3 minutes per side until golden and crispy.

5. Let rest a minute before slicing diagonally. Garnish with parsley or chives and serve with your favorite dips.

Notes

You can use pre-cooked rotisserie chicken to save time and still keep all the flavor.
