- 1 lb smoked sausage, sliced
- 1 lb chicken breast, cubed
- 12 oz rotini or penne pasta
- 4 cups chicken broth
- 1 packet (or 2 tbsp) ranch seasoning mix
- 2 cups shredded cheddar cheese
- 1/2 cup heavy cream
- 1–2 tbsp olive oil or butter
- Salt and pepper to taste
- Optional: 1/2 tsp smoked paprika
Instructions
- In a large pot, heat olive oil or butter over medium-high heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same pot, add cubed chicken breast. Season lightly with salt, pepper, and paprika. Sear until golden and cooked through. Remove and set aside.
- Pour chicken broth into the pot and add the dry pasta. Stir in ranch seasoning. Bring to a boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally, until pasta is tender.
- Return sausage and chicken to the pot. Lower the heat and stir in heavy cream and cheddar cheese until melted and creamy. Adjust seasoning to taste.
