Ingredients

1 tablespoon olive oil

1 pound ground beef

1 small onion, diced

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes

2 tablespoons tomato paste

28 ounces crushed tomatoes

4 cups low-sodium chicken broth

8 lasagna noodles, broken into pieces

1/2 cup ricotta cheese

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 cup fresh spinach or kale

Fresh basil or parsley for garnish


Instructions

1. Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.

2. Add diced onion and sauté until translucent, about 4 minutes. Stir in garlic and cook for 1 minute.

3. Season with salt, black pepper, Italian seasoning, and crushed red pepper flakes. Stir in tomato paste and cook for another 2 minutes.

4. Pour in crushed tomatoes and broth. Bring the mixture to a simmer.

5. Add broken lasagna noodles and simmer for 12–15 minutes, stirring occasionally.

6. Reduce heat and stir in ricotta, mozzarella, and Parmesan. Add spinach or kale and cook until wilted.

7. Taste and adjust seasoning. Garnish with extra cheese and fresh herbs before serving.

Notes

Add cheese at the end to keep the soup creamy and prevent curdling.

Use a large, heavy-bottomed pot for even cooking and easy stirring.

Let the soup sit 5–10 minutes before serving — it thickens and deepens in flavor.
