1 tbsp olive oil

14 oz smoked sausage, sliced

3 cloves garlic, minced

1 tsp Cajun seasoning

1/2 tsp paprika

1/4 tsp black pepper

1/4 tsp salt

10 oz diced tomatoes with green chilies, undrained

2 cups chicken broth

1/2 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup shredded mozzarella

1/4 cup grated Parmesan cheese

Chopped parsley or green onions, for garnish (optional)


Instructions

1. Heat olive oil in a deep skillet over medium-high heat. Add sliced sausage and brown on both sides for about 5–7 minutes. Remove excess grease if needed.

2. Lower the heat and add garlic. Sauté for 30 seconds until fragrant. Stir in Cajun seasoning, paprika, pepper, and salt.

3. Add diced tomatoes, pasta, and chicken broth. Stir and bring to a boil. Reduce heat to low, cover, and simmer 12–15 minutes until pasta is tender.

4. Stir in heavy cream, cheddar, mozzarella, and Parmesan until the sauce is creamy and smooth. Adjust seasoning if necessary.

5. Let rest for 2–3 minutes to thicken. Garnish with chopped parsley or green onions and serve hot.

Notes

For a lighter version, you can substitute half-and-half for the heavy cream.
