Ingredients

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced

2 tablespoons all-purpose flour

4 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

8 oz wide egg noodles

3/4 cup sour cream

2 tablespoons fresh parsley, chopped


Instructions

1. In a large deep skillet over medium-high heat, cook the ground beef until browned. Drain excess grease if needed.

2. Add onion and cook 3–4 minutes. Stir in garlic and mushrooms and sauté until mushrooms soften.

3. Sprinkle flour over mixture and cook for 1 minute while stirring.

4. Slowly pour in beef broth while stirring. Add Worcestershire sauce, Dijon mustard, paprika, salt, and pepper.

5. Add uncooked egg noodles. Bring to a gentle boil, reduce to simmer, cover and cook 8–10 minutes stirring occasionally.

6. Remove from heat and stir in sour cream until smooth and creamy.

7. Garnish with parsley and serve warm.

Notes

Add sour cream off heat to prevent curdling.

Stir noodles occasionally to prevent sticking.

Add a splash of broth when reheating to maintain creaminess.
