  • 14 oz smoked sausage, sliced into rounds
  • 1 1/2 cups shredded white cheddar cheese
  • 1 packet ranch seasoning mix
  • 2 cups milk
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 cups baby spinach
  • 1/2 cup roasted red peppers, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sausage slices and brown them until golden on both sides. Remove and set aside.
  3. In the same pan, melt butter and sauté minced garlic until fragrant (about 30 seconds).
  4. Pour in the chicken broth and milk, scraping up any browned bits from the bottom of the pan.
  5. Stir in the ranch seasoning mix and bring to a gentle simmer.
  6. Add rotini pasta and ensure it’s mostly submerged. Cover and cook, stirring occasionally, until pasta is al dente (12–15 minutes).
  7. Lower the heat and gradually stir in the shredded white cheddar cheese until smooth and creamy.
  8. Fold in baby spinach and roasted red peppers. Allow the spinach to wilt slightly.
  9. Return the sausage to the pan and stir everything together.
