Ingredients

1 pound sirloin steak, cut into 1-inch cubes

1 tablespoon olive oil

1 tablespoon butter

Salt and freshly ground black pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika (optional)

1 teaspoon Worcestershire sauce

8 ounces rotini pasta

3 tablespoons butter

3 cloves garlic, minced

1/2 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

Chopped parsley, for garnish

1/4 cup reserved pasta water (optional)


Instructions

1. Bring a pot of salted water to a boil. Add rotini and cook until just shy of al dente. Reserve ¼ cup pasta water, drain, and set aside.

2. Pat steak dry. Toss with olive oil, salt, pepper, garlic powder, paprika, and Worcestershire. Let rest 5–10 minutes.

3. Heat a skillet over medium-high heat. Add 1 tbsp butter. Sear steak in batches 2–3 minutes per side. Remove and cover loosely.

4. In the same pan, lower heat to medium. Add 3 tbsp butter and minced garlic. Cook 30 seconds until fragrant.

5. Add heavy cream. Stir to deglaze the pan, scraping up browned bits.

6. Stir in mozzarella and parmesan. Let melt into a creamy sauce. Add pasta water if needed to thin.

7. Toss in cooked pasta. Stir to coat and simmer 2–3 minutes.

8. Plate noodles, top with steak bites, and garnish with parsley and black pepper. Serve immediately.

Notes

Let steak sit at room temp before searing for even cooking.

Use freshly grated cheese to ensure a smooth, creamy sauce.

Add a splash of pasta water to help emulsify and loosen the sauce if needed.
