Ingredients
- 2 large chicken breasts, sliced into thin strips
- 2 tablespoons olive oil
- 3 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- 3 cloves garlic, minced
- 2 ½ cups chicken broth (low sodium)
- 1 cup heavy cream
- 1 tablespoon brown sugar
- 1 tablespoon tomato paste
- 8 oz penne pasta (uncooked)
- ½ cup freshly grated Parmesan cheese
- ¼ teaspoon crushed red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
- Cherry tomatoes, halved (optional)
Instructions
-
Season and Sear the Chicken
Toss chicken strips with Cajun seasoning, paprika, salt, and pepper. Heat olive oil in a large skillet and sear chicken for 2–3 minutes per side until cooked through. Remove and set aside. -
Build the Flavor Base
In the same skillet, sauté minced garlic for about 30 seconds. Add tomato paste and cook for another minute. -
Create the Sauce
Pour in chicken broth, heavy cream, and brown sugar. Stir well and bring to a gentle simmer. -
Cook the Pasta
Add uncooked penne to the skillet. Stir occasionally and cover, cooking for 12–14 minutes until pasta is tender and sauce is absorbed. -
Finish and Serve
Stir in Parmesan and red pepper flakes. Return chicken to the pan and simmer for an additional 2–3 minutes. Garnish with parsley and cherry tomatoes before serving.
