2 cups elbow macaroni

2 tablespoons unsalted butter

2 cloves garlic, minced

2 1/2 cups vegetable or chicken broth

1/2 cup grated parmesan cheese

1/3 cup heavy cream

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped parsley (optional)


Instructions

1. Melt butter in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant but not browned.

2. Stir in the uncooked pasta and pour in the broth. Make sure the pasta is mostly submerged.

3. Bring to a simmer, cover, and cook for 10–12 minutes, stirring occasionally until pasta is al dente and most of the liquid is absorbed.

4. Lower the heat. Stir in the heavy cream and gradually add the grated parmesan, stirring until melted and the sauce is creamy.

5. Season with salt and black pepper. Sprinkle with chopped parsley before serving, if desired.

Notes

Freshly grated parmesan melts better and creates a smoother sauce than pre-shredded.

Stir the pasta every few minutes during cooking to prevent sticking.
