  • 1 zucchini, sliced into rounds
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • Juice of 1 lemon
  • Lemon slices, for garnish
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Ingredients: Wash and slice the zucchini into rounds, halve the cherry tomatoes, and mince the garlic. Pat the chicken breasts dry.

  2. Season the Chicken: In a small bowl, mix salt, pepper, Italian seasoning, and red pepper flakes (if using). Rub this mixture evenly over both sides of the chicken breasts.

  3. Sear the Chicken: Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the seasoned chicken and cook for 4-5 minutes per side, until golden brown and cooked through (internal temp 165°F/75°C). Remove from the pan and set aside.

  4. Cook the Vegetables: In the same skillet, add the remaining olive oil if needed. Sauté the minced garlic for 30 seconds, then add the zucchini and cherry tomatoes. Cook for 3-4 minutes, stirring occasionally, until the veggies soften and slightly caramelize.

  5. Add Lemon and Finish Cooking: Return the chicken to the pan, squeeze fresh lemon juice over everything, and add lemon slices for extra flavor. Cook for 1 more minute to let the flavors combine.

  6. Garnish and Serve: Sprinkle fresh chopped parsley over the dish and serve immediately. Enjoy as is or pair with rice, quinoa, or crusty bread.
