  • 3 ripe bananas, mashed
  • 1/2 cup (120 ml) vegetable oil or melted butter
  • 1/2 cup (100 g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120 ml) milk
  • 1 3/4 cups (220 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (175 g) chocolate chips
  • Optional: 1/2 tsp cinnamon, 1/4 cup chopped nuts, 2 tbsp Greek yogurt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease well.
  2. In a large bowl, mash bananas with a fork or potato masher until mostly smooth.
  3. Add oil, brown sugar, eggs, vanilla, and milk. Whisk until well combined.
  4. Add flour, baking soda, and salt. Stir gently until just combined.
  5. Fold in chocolate chips and any optional mix-ins.
  6. Divide batter evenly into the muffin cups, filling each about 3/4 full.
  7. Sprinkle a few extra chocolate chips on top if desired.
  8. Bake for 18–22 minutes or until a toothpick comes out clean.
  9. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack.
