Ingredients

  • 2 cups granulated sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats

Optional Add-ins:

  • Pinch of salt
  • 1/3 cup shredded coconut
  • Mini chocolate chips or chopped nuts

Instructions

  1. Line a baking sheet with parchment or wax paper.
  2. In a medium saucepan over medium heat, combine sugar, butter, milk, and cocoa powder. Stir frequently.
  3. Bring the mixture to a full rolling boil and cook for exactly 60 seconds.
  4. Remove from heat. Stir in peanut butter and vanilla until smooth.
  5. Add oats and stir until fully coated.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet.
  7. Let the cookies cool and set at room temperature for 30–45 minutes, or refrigerate for 20 minutes.
