  • 2 cups elbow macaroni (uncooked)
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar
  • 1/2 cup finely diced red onion
  • 1/2 cup finely chopped celery
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add macaroni and cook until al dente (about 7–8 minutes). Drain and rinse with cold water. Let cool completely.
  2. In a medium bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, and sugar.
  3. In a large mixing bowl, combine cooled macaroni, red onion, celery, and parsley.
  4. Pour the dressing over the macaroni mixture and gently fold to combine.
  5. Cover and refrigerate for 1–2 hours before serving.
  6. Before serving, stir and adjust seasoning with salt and pepper. Add a splash of milk or extra mayo if needed.
