- 6 medium russet potatoes, diced
- 1 lb bacon, cooked and crumbled
- 2 cups shredded sharp cheddar cheese
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Parboil the diced potatoes in salted water for 5-7 minutes. Drain and let steam dry.
- In a large bowl, mix sour cream, mayonnaise, 1.5 cups of cheddar cheese, green onions, salt, and pepper.
- Fold in the potatoes and half the crumbled bacon.
- Transfer to a greased 9×13-inch baking dish.
- Top with remaining cheese and bacon.
- Bake uncovered for 25-30 minutes, until bubbly and golden.
- Let cool for 5 minutes, garnish with extra green onions, and serve.
