  • 6 medium russet potatoes, diced
  • 1 lb bacon, cooked and crumbled
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Parboil the diced potatoes in salted water for 5-7 minutes. Drain and let steam dry.
  3. In a large bowl, mix sour cream, mayonnaise, 1.5 cups of cheddar cheese, green onions, salt, and pepper.
  4. Fold in the potatoes and half the crumbled bacon.
  5. Transfer to a greased 9×13-inch baking dish.
  6. Top with remaining cheese and bacon.
  7. Bake uncovered for 25-30 minutes, until bubbly and golden.
  8. Let cool for 5 minutes, garnish with extra green onions, and serve.
