36 Oreo cookies

8 oz cream cheese softened

1/2 tsp peppermint extract

12 oz white chocolate or candy melts

1/2 tsp green food coloring optional

4 oz dark or semi-sweet chocolate

1 tbsp coconut oil optional


Instructions

1. Crush the Oreo cookies into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin.

2. Mix the Oreo crumbs with softened cream cheese until smooth and fully combined.

3. Add peppermint extract and mix evenly.

4. Roll into small bite-sized balls and place on a parchment-lined tray.

5. Chill for 30–45 minutes or freeze for 15–20 minutes until firm.

6. Melt white chocolate in intervals, stirring until smooth, then add coconut oil and coloring if desired.

7. Dip each truffle into melted chocolate and place on parchment paper.

8. Drizzle melted dark chocolate over the top.

9. Let set completely before serving.
