Ingredients

  • 1 1/2 cups cooked salmon (or two 6 oz cans, drained and flaked)
  • 1 large egg
  • 1/2 cup breadcrumbs (or panko)
  • 2 tbsp chopped fresh parsley
  • 1 garlic clove, minced
  • 1 tbsp finely diced red onion (optional)
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes (adjust to taste)
  • Salt and black pepper to taste
  • 2 tbsp olive oil (for frying)

Optional Add-ins:

  • Chopped spinach or kale
  • Feta cheese crumbles
  • Chopped sun-dried tomatoes

Instructions

  1. Place flaked salmon in a large mixing bowl.
  2. Add egg, breadcrumbs, parsley, garlic, red onion, lemon zest and juice, oregano, red pepper flakes, salt, and pepper.
  3. Mix gently with a fork until just combined.
  4. Form into 4–6 patties, about 3/4 inch thick.
  5. Optional: Chill patties in fridge for 15–20 minutes for easier handling.
  6. Heat olive oil in a skillet over medium heat.
  7. Cook patties 3–4 minutes per side until golden brown and cooked through.
  8. Serve hot with your favorite side or dipping sauce.
