  • 1 lb (450g) lean ground beef (85-90% lean)
  • 1 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium tomato, diced
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • (Optional) 1 small zucchini or cucumber, diced
  • 1 tsp ground cumin
  • 1/2 tsp paprika (smoked or sweet)
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • 1/4 tsp red chili flakes (optional)
  • 2 tbsp chopped fresh parsley
  • (Optional) Juice of 1/2 lemon
  • (Optional) Crumbled feta cheese

Instructions

  1. Dice all vegetables and mince the garlic. Chop parsley and set aside.
  2. Heat a large skillet over medium-high heat. Add olive oil.
  3. Add ground beef. Break it apart and cook until browned, about 6-8 minutes. Drain excess grease.
  4. Push beef to one side. Add onions and cook until soft, 2-3 minutes. Stir in garlic and cook 30 seconds more.
  5. Add bell peppers and tomato. Cook for 5-7 minutes until just tender.
  6. Stir in cumin, paprika, oregano, salt, pepper, and chili flakes. Cook for 2-3 more minutes.
  7. Remove from heat. Add lemon juice and fresh parsley. Top with feta if using.
