Ingredients
- 1 lb ground beef (85–90% lean)
- 1 medium zucchini, sliced
- 2 bell peppers (any color), sliced
- 1 red onion, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp ground cumin
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)

Prepare the Ingredients
Slice zucchini and bell peppers, thinly slice red onion, mince garlic, and chop parsley. -
Brown the Ground Beef
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned and fully cooked. Drain excess fat if needed. -
Sauté the Aromatics
Push beef to one side of the pan, add another drizzle of olive oil. Add garlic and red onion. Cook for 1–2 minutes until fragrant. -
Add the Vegetables
Add zucchini and bell peppers to the skillet. Stir everything together. Season with paprika, oregano, cumin, salt, and pepper. -
Cook Until Crisp-Tender
Cook for 5–7 minutes, stirring occasionally, until veggies are crisp-tender. -
Finish and Serve
Taste and adjust seasoning if needed. Remove from heat. Sprinkle with fresh parsley and serve hot.
