  • 1 lb ground beef (85–90% lean)
  • 1 medium zucchini, sliced
  • 2 bell peppers (any color), sliced
  • 1 red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp ground cumin
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients
    Slice zucchini and bell peppers, thinly slice red onion, mince garlic, and chop parsley.

  2. Brown the Ground Beef
    Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned and fully cooked. Drain excess fat if needed.

  3. Sauté the Aromatics
    Push beef to one side of the pan, add another drizzle of olive oil. Add garlic and red onion. Cook for 1–2 minutes until fragrant.

  4. Add the Vegetables
    Add zucchini and bell peppers to the skillet. Stir everything together. Season with paprika, oregano, cumin, salt, and pepper.

  5. Cook Until Crisp-Tender
    Cook for 5–7 minutes, stirring occasionally, until veggies are crisp-tender.

  6. Finish and Serve
    Taste and adjust seasoning if needed. Remove from heat. Sprinkle with fresh parsley and serve hot.
