For the Dough:

  • 3 ½ cups (440g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 2 ¼ teaspoons (1 packet) active dry yeast
  • ¾ cup (180ml) warm milk (about 110°F/45°C)
  • ¼ cup (60g) unsalted butter, melted
  • 1 large egg
  • ½ teaspoon salt

For the Lemon Filling:

  • ½ cup (120g) lemon curd
  • ¼ cup (50g) granulated sugar
  • 1 tablespoon lemon zest

For the Sweet Glaze:

  • 1 cup (120g) powdered sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream (or milk)

Instructions

Prepare the Dough:

  1. In a small bowl, mix warm milk and sugar. Sprinkle yeast over the top and let sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture, melted butter, and egg. Mix until a soft dough forms.
  3. Knead on a lightly floured surface for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-6 minutes.
  4. Place dough in a greased bowl, cover, and let rise for 1 to 1.5 hours, or until doubled in size.

Make the Lemon Filling:

  1. In a small bowl, mix lemon curd, sugar, and lemon zest until combined.

Roll and Fill the Dough:

  1. Roll out the risen dough into a 14×9-inch rectangle on a floured surface.
  2. Spread lemon filling evenly over the dough, leaving a small border around the edges.
  3. Roll dough tightly from the long side into a log and cut into 12 equal rolls.

Second Rise:

  1. Place rolls in a greased 9×13-inch baking dish, cover, and let rise for 30-45 minutes until puffy.

Bake the Lemon Rolls:

  1. Preheat oven to 350°F (175°C).
  2. Bake for 20-25 minutes, or until golden brown.

Make the Glaze & Serve:

  1. Whisk together powdered sugar, lemon juice, vanilla extract, and heavy cream until smooth.
  2. Drizzle glaze over warm rolls. Serve and enjoy!
