  • 3 pounds Yukon Gold or Russet potatoes, peeled and sliced 1/8-inch thick
  • 1 1/2 cups heavy cream
  • 1 cup whole milk
  • 3 tablespoons butter
  • 2 garlic cloves, minced
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 slices bacon, cooked and chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh chives, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the bacon in a skillet over medium heat until crispy. Set aside on paper towels, then chop.
  3. In a saucepan, melt butter over medium heat. Add garlic and cook for 1 minute. Stir in cream and milk, heat gently.
  4. Add half of the cheddar and mozzarella cheese to the sauce. Stir until melted. Season with salt and pepper.
  5. Spoon some sauce into the baking dish. Layer with potatoes, more sauce, and bacon. Repeat until all ingredients are used, finishing with sauce and remaining cheese on top.
  6. Cover with foil and bake for 35 minutes.
  7. Remove foil and bake uncovered for 20–25 minutes until golden and bubbly.
  8. Let rest for 10 minutes before serving. Garnish with chopped chives.
