Ingredients

Scale

2 cups mashed potatoes

1 cup shredded sharp cheddar cheese

1/3 cup chopped cooked bacon

1/4 cup chopped chives or green onions

1/4 cup sour cream

1 egg, lightly beaten

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper, to taste

1/2 cup breadcrumbs

Cooking spray or melted butter


Instructions

1. In a large mixing bowl, combine mashed potatoes, cheddar cheese, bacon, chives or green onions, sour cream, garlic powder, onion powder, salt, and pepper. Mix thoroughly.

2. Stir in the lightly beaten egg to help bind the mixture.

3. Chill the mixture for 20–30 minutes for easier handling.

4. Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C). Grease a mini muffin tin or silicone mold.

5. Scoop the mixture into each muffin cup. Optionally, roll in breadcrumbs before placing.

6. Bake for 20–25 minutes or air fry for 10–12 minutes until golden and crispy.

7. Let cool slightly, then gently remove and serve with dipping sauces.

Notes

Make sure mashed potatoes are thick and chilled for best results.
