Ingredients

1 cup cake flour

1 1/2 cups granulated sugar, divided

12 large egg whites, room temperature

1 1/2 teaspoons cream of tartar

1/4 teaspoon salt

1 1/2 teaspoons vanilla extract

1/2 teaspoon almond extract (optional)

1/3 cup rainbow jimmies

Whipped topping or stabilized whipped cream (for frosting)

Rainbow sprinkles for topping


Instructions

1. Preheat oven to 350°F (175°C). Do not grease your tube pan.

2. Sift together cake flour and half of the sugar (3/4 cup), twice for lightness.

3. Beat egg whites with mixer on medium until foamy, then add cream of tartar and salt.

4. Gradually add remaining 3/4 cup sugar and beat until stiff, glossy peaks form.

5. Gently fold in vanilla and optional almond extract.

6. Sift flour mixture over egg whites in 3 batches, folding gently each time.

7. Fold in rainbow jimmies slowly to avoid color bleeding.

8. Spoon batter into tube pan. Run a knife through to remove air pockets and smooth top.

9. Bake 35–40 minutes until golden and springy to touch.

10. Invert the pan and cool completely upside down before removing.

11. Frost with whipped topping and garnish with sprinkles. Slice using a serrated knife.

Notes

Always use a clean, grease-free bowl and utensils for whipping egg whites.

Do not grease the pan—this cake needs to cling to the sides to rise.

Use rainbow jimmies instead of nonpareils to avoid bleeding colors in batter.
