- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar (plus extra for rolling)
- 1 large egg
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, beat butter and sugar until light and fluffy (2–3 minutes).
- Add the egg, lemon juice, lemon zest, and vanilla extract. Mix until well combined.
- Gradually mix in the dry ingredients just until no flour streaks remain.
- Scoop tablespoon-sized portions and roll into balls.
- Roll each ball in granulated sugar and place on prepared baking sheets.
- Bake for 9–11 minutes, or until edges are set and tops are slightly crackled.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
