These Lemon Shortbread Cookies are buttery, crumbly, and kissed with citrus zest for a refreshing treat. Topped with a tangy lemon glaze, they’re perfect for any season, especially when you crave something light, elegant, and easy to make.
Ingredients
1 cup unsalted butter, softened
2/3 cup powdered sugar
1 tablespoon fresh lemon zest
1/2 teaspoon vanilla extract
1/4 teaspoon salt
2 cups all-purpose flour
1 cup powdered sugar
2 to 3 tablespoons fresh lemon juice
1/2 teaspoon lemon zest (optional for garnish)
Instructions
1. Cream the softened butter with powdered sugar using a mixer until light and fluffy, about 2–3 minutes. Add lemon zest, vanilla, and salt. Mix to combine.
2. Gradually add flour and mix just until incorporated. Do not overmix.
3. Scoop tablespoon-sized portions, roll into balls, and flatten slightly. Place on a parchment-lined baking sheet.
4. Preheat oven to 325°F (165°C). Bake for 12–15 minutes until edges are lightly golden.
5. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
6. In a bowl, whisk together powdered sugar and lemon juice for the glaze. Adjust consistency as needed.
7. Drizzle glaze over cooled cookies. Garnish with extra zest if desired.
8. Allow glaze to set for 15–20 minutes before serving or storing.
Notes
Let the glaze set completely before stacking to avoid smudging.
For extra lemon punch, add a dash of lemon extract to the glaze.
Dough can be chilled for 10 minutes if it’s too soft for shaping.
