Ingredients
Scale
- 1 ½ lbs chicken tenders (or sliced chicken breasts)
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon lemon zest
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup all-purpose flour
- 2 eggs, beaten
- 2 tablespoons olive oil or melted butter (for baking)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. If frying, heat about ½ inch of oil in a pan over medium heat.
- Set up three bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with a mixture of panko, Parmesan, garlic powder, and lemon zest.
- Dredge each chicken tender in flour, then dip into the egg, and coat evenly with the breadcrumb mixture. Press the coating firmly to ensure it sticks.
- For Baking: Place tenders on the baking sheet, lightly brush with olive oil, and bake for 18-20 minutes, flipping halfway through.
- For Frying: Fry tenders for 3-4 minutes per side until golden brown, then drain on paper towels.
- For Air Frying: Preheat the air fryer to 375°F (190°C), place tenders in a single layer, and air fry for 10-12 minutes, flipping halfway through.
- Let the tenders cool slightly before serving. Serve hot with lemon wedges and your favorite dipping sauce.
