1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

2 tablespoons olive oil, divided

4 cloves garlic, minced

1/4 teaspoon red chili flakes (optional)

Zest of 1 lemon

Juice of 1 large lemon (about 3 tablespoons)

1 tablespoon honey or maple syrup

1 tablespoon soy sauce or coconut aminos

Salt and freshly ground black pepper to taste

1 tablespoon fresh parsley, chopped

Lemon slices for serving (optional)

Cooked rice or other sides for serving


Instructions

1. Pat chicken pieces dry with paper towels and season with salt and pepper.

2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.

3. Add chicken in a single layer and sear for 3–4 minutes on each side until golden and cooked through. Cook in batches if needed.

4. Remove the chicken and set aside.

5. In the same skillet, lower the heat to medium and add remaining olive oil, garlic, chili flakes, lemon zest, and a pinch of salt. Stir for 30–45 seconds.

6. Add lemon juice, honey, and soy sauce. Simmer for 1–2 minutes to deglaze and blend flavors.

7. Return chicken to skillet, tossing to coat evenly in the sauce. Simmer for another 1–2 minutes.

8. Garnish with parsley and lemon slices. Serve hot over rice or desired sides.
