  • 2 cod fillets (6 oz each, skin-on)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter (plus 1 tbsp for cooking)
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Pat cod fillets dry thoroughly with paper towels.
  2. Season both sides with salt, pepper, and paprika.
  3. Heat a skillet over medium-high heat. Add olive oil and 1 tbsp butter.
  4. When the pan is hot, place cod fillets skin-side down. Press gently with a spatula.
  5. Cook for 4–5 minutes without moving, until the skin is crispy.
  6. Flip the fillets and cook for another 2–3 minutes until the fish is opaque and flakes easily.
  7. In a small saucepan, melt 2 tbsp butter over low heat. Add garlic and cook for 1–2 minutes until fragrant.
  8. Stir in lemon juice and a pinch of salt, then remove from heat.
  9. Plate the cod, drizzle with lemon garlic butter, and sprinkle with parsley.
