1 (10.5 oz) can cream of chicken soup

1 (10.5 oz) can cream of mushroom soup

1/2 cup sour cream

1/4 cup finely diced yellow onion

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper to taste

2 to 4 boneless, skinless chicken breasts

1 tablespoon olive oil or melted butter (optional)

Instructions

1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

2. In a bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, chicken broth, garlic powder, onion powder, salt, and black pepper until smooth.

3. Pour uncooked rice into the baking dish, sprinkle in the diced onion, and pour the creamy soup mixture over. Stir gently to combine.

4. Lay chicken breasts over the rice mixture in a single layer. Season with salt, pepper, and paprika. Brush tops with olive oil or melted butter if using.

5. Cover the dish tightly with aluminum foil and bake for 50 minutes.

6. Remove foil and bake uncovered for another 20–25 minutes until chicken is cooked through (165°F internal temp).

7. Let the casserole rest for 5–10 minutes before serving to set and absorb any remaining liquid.

Notes

Always use long-grain white rice for proper texture—instant or brown rice won’t work here.

For extra depth of flavor, mix in frozen peas, sautéed mushrooms, or shredded cheese.

Letting the dish rest before serving helps the rice soak up all the creamy goodness without being runny.
